After 16 years in Vietnam, chef Geoffrey Deetz is nearly ready to launch his first Vietnamese restaurant, The Temple Club, in Oakland. (He’s aiming to open in mid- to late-September.) But first, Deetz will give diners a taste of what’s to come through three pop-ups. The first one, on Friday, Sept. 1, will be an elaborate, 10-course meal focusing on dishes from Da Nang and Hoi An. Served family-style, the feast includes exciting ingredients such as pig ears, jellyfish, baby octopus, and durian. The second pop-up goes down on Tuesday, Sept. 5, and will focus on dishes from Hanoi as well as the season’s abundance of tomatoes. The third and final pop-up on Friday, Sept. 8, will showcase a style of seafood dinner from coastal cities Da Nang and Phan Thiet, with lots of grilled proteins paired with herbs and dipping sauces.
