It’s standard for the best taco trucks to trade their wheels for a permanent spot. Taqueria Sinaloa, however, kept expanding: first into a restaurant behind the truck, then into a second truck on the other side of the parking lot. And it has diversified: Truck number two specializes in seafood — roast fish tacos covered in salsa fresca, ceviche tostadas, bowls of shrimp, octopus, and crab coctels. Throughout it all, the food quality has remained high. The meat in the tacos, tortas, and burritos is still braised to the point of melting, perked up with onions, cilantro, and a wallop of salsa. Few other places go beyond chicken al pastor, steak, and the like to include birria de chiva (stewed goat) and buche (pork belly). Plus, you won’t have to wash your car so you can dine off the hood, because you can sit at plastic tables on Sinaloa’s plant-ringed, covered patio.
