One of the great things about the Fruitvale taco truck scene is that the trucks are all fairly idiosyncratic — one place might make the best carne asada tacos; another might serve up killer al pastor; yet another might be your go-to place for tortas or breakfast burritos or aguas frescas. You can easily spend an afternoon going from truck to truck, hitting each one’s highlights, and never have to eat the same thing twice. But if what you’re craving for your taco is tasty meat, the El Novillo truck, in the parking lot of the Guadalajara Restaurant, is a pretty safe bet. This is where we go when we have a craving for fatty-crisp pork carnitas or tender beef lengua (tongue) with all the fixins. And for something decadent and a little bit out of the ordinary, the “tripas” (fried pork intestine) tacos are seriously off the hook.
