Oakland’s newest noodle joint, Ramen Shop, is so popular that it doesn’t even need a sign on its door. Started by Chez Panisse alums Jerry Jaksich, Rayneil De Guzman, and Sam White, the restaurant serves Japanese ramen with a California twist. Each night features three kinds: typically a pork, vegetarian, and seafood option. We love the ground pork belly miso broth, which came adorned with half a shoyu-marinated egg and a few cooked veggies in the mix. For those of you who think of a Styrofoam cup of hard, kinky twigs and dehydrated “vegetables” when you hear the word ramen, these noodles, salted to perfection, will change your mind — plus, they’re free of pesticides, GMOs and MSG. In other words, they’re worth however long you have to wait to eat them.
